What's so unique about green tea?

The leaves that go into authentic green tea do not undergo the fermentation or oxidation process that’s part of blending regular teas. This gives us a tea that’s lighter with delicate notes. In fact, good quality green tea has an almost bittersweet taste with a grassy herbal note.
